Jenna's Tuna Salad
Traditional "tuna salad" is a mix of tinned tuna, mayonnaise and maybe a couple of vegetables. My version is vibrant, flavourful and super-healthy.
Ingredients
Salad
1 can tuna, size is up to you!
1 avocado, peeled, de-seeded and diced
1 punnet cherry tomatoes, cut in half
1 red capsicum (bell pepper), washed and diced
1 green capsicum (bell pepper), washed and diced
1 Lebanese cucumber, de-seeded and diced (no need to peel)
1 rib celery, diced
1/4 cup black olives, pitted and chopped
1/4 cup green olives, pitted and chopped
1 red onion, peeled and diced
1 handful parsley, finely chopped
1 bunch dill, finely chopped (trust me, the dill MAKES this salad!)
2 tablespoons capers
6 gherkins or dill pickles, diced
OPTIONAL: 1-2 tablespoons seeded mustard and/or 1-2 tablespoons finely diced jalapeno pepper
Dressing
1 tablespoon olive oil
2 tablespoons apple cider vinegar
3 tablespoons lemon juice
Salt and pepper
Method
Dressing
Place all ingredients in a bowl and whisk together
Salad
Combine all salad ingredients in a bowl. Add dressing and toss to combine.
Serve and enjoy!
